Ham is cured. Pork fillet, joints, mine, chops decay like any pig meat and in a similar fashion to human flesh.

The process of decomposition in all meat products leads to the production of similar chemicals as the decay process is a natural process.
In the same way that a dog will react to rotting human muscle, the will have originally reacted to rotten pig muscle.

You do know that Eddie was initially trained on decaying pork, do you not?

It might be difficult to find a decaying pig, even a wild boar. So likely handlers get left overs of pork, like blood, viscera, lymph etc. that they will let decay.
Those who tasted it say the meat closest to human flesh is stag (it's a bit sweet).
