He appears to do this so the barman Joe can have a night off on Tuesday and a day shift on Friday. That suggests Tiago covered the bar, so he would know if the group stayed late on Tuesday as 00.30 is half an hour after his finishing time.
In his first statement Joe says they normally left between 23.00 and 24.00. He doesn't say they stayed late on 2nd, just that they had after dinner drinks.
In his rog statement he refers to that night again. He says;
I believe that on the first or second night [it was actually the fourth night, allegedly] they dined in the Tapas, they drank a bit more, perhaps eight or nine bottles of wine. I believe that they were also offered liquor this night, as they had been such good clients......On the night in which they drank more than usual, they left a bit later, perhaps towards 00h30-01h00. I remember this detail because I was supposed to finish work at 00H00 and I wanted to go home.

One or more of them, on another night, asked for an after-dinner drink. He remembers this clearly because they asked for Amareto and the bar did not stock it.
The witness served almond bitters to all. He remembers that this happened on Wednesday. He does not remember if they had more after-dinner drinks. He does remember that on Wednesday, certain elements of the group got up, with their after-dinner drinks, and headed to the bar and stayed there until about 00H00/00H10.
